[Applause] welcome back welcome back it is my tasting table uh we are still with my dear friend co-author yeah of my new cookbook a confident cook L styling is here we are making a grilled bronzino that you can make inside or outside a whole bronzo it's one of my favorite things you can scan the QR code bottom of the screen for the full recipe so we put this bronzino on the grill pan this is my favorite thing in the kitchen it is called a fish spatula I never heard of it again it is not fancy and how I discovered the fish spatula in the book we talk about when I first started to learn to cook and she watches the bronzino cuz I'm hungry um I went to a store and I thought how do I become a confident cook that means I need to buy everything in the store I walked out of a store we won't name I know and I'm going to tell y'all this true story on TV I spent $2,000 and I left the store not able to cook because I was like oh I need that thing and I need this thing and this thing does this and what I need and I walked out the the stores nearby I walked out with people following me with bags they were like sucker so and then we became friends and I was like why do you have this she literally pulled the drawer out and was like not this not this not this not this she had a peeler that I didn't know how to use a vegetable peeler I was like what and the most amazing gift she ever gave me we tell you in the book it was like a 99 nonsense peeler supposed to so anyway we grilled the fish you flipped it over so we flip it over it's like six to seven minutes per side you know that it's done when it's ready to flip when it releases from the pan right it tells you when it wants to be flipped if you're sitting there like having to scrape at it it's not ready you just have to be patient okay and it's not going to burn you'll be okay and that's a part of people ask me how did I become confident in the kitchen it really is about just getting in there and trying things for example for years I did morning TV for 30 years I've cooked with every Chef you could imagine you would never have gotten me to chop on TV in my life at a girl and listen yes I know some of you will Zero in and go that's all wrong guess what I got my five fingers so I'm doing it right but they were curled they are curl and so that's a big part of this this book we talk about we have a chapter called don't sweat the technique we have a chicken called Who you calling chicken we have a chapter that says do you really need that inspired by all the things I bought that I really didn't need because confidence in the kitchen is about getting in the kitchen and trying no matter your skill level it's so true and the difference in Tamarind like what are you trying to say confidence no from when we met oh I was about to say I was about to it's it's night and day let me tell you like there was was a time that talking through some things it's like ooh is she G is she going to make it out okay but then when she had success and friends would FaceTime me saying Tam just made me this amazing meal she said that you taught her how to do it like that's the win right so thank you darling and so in the book we really do have you need well okay I love this remember Tamp fam said I need your as a friend here's the deal that's what we do in this book ask the question that you might be tooo afraid to ask or you don't happen to have a James Beard award winner in your home and so through this I am like we have everything from breakfast which a we have a baked French toast with cardamon that people won't ever want to leave your home I mean seriously we have our burger that I'm going to put in a competition cuz it is the we call it the Triple B burger and you going to be saying baby baby baby when you get done it's a good burger yeah we won't tell you the secret you got to buy the book and because we're about family this chapter I'm also so proud of is the leftover solution you end up with leftovers what do you do we say fry it up we will help you figure it out so the book is techniques it's flavor it's food we have drinks cocktails oh yeah we have snacks and we have familyfriendly food including a grilled cheese that Lish made in honor she tested it out on Moses we left the grilled cheese he ate it and took a nap in the car yes he did he took he ate the grilled cheese and the next thing I know I looked back my baby was like I was like what that's a what did you go to last night all right so you got the salsa Verdi we have Capers garlic in it olive oil lemon zest parsley parley Y and why does this compliment the bronzino so perfectly it's bright it's uh Herby it's all the things that you want it's a little Briny from those Capers uh it's everything that you want to pair with the freshness of the seafood also if you happen to tear your fish a little bit this will fix it all right you just cover it up you don't have to put it around the outside like oh there's a hole there just fill it think of it this way it's like the day you want to take a picture and you have a pimple and you're like let me get some concealer this it's a concealer for anything Julia Child saying what happens in the kitchen they don't know right like you you just made something with love that's what counts right yeah this fish is so good I'm not I I know it's my fish in my book you've had it so many times but f is so amazing and I'm going to tell you the most important part of building your confidence is getting in there and we take you through the process it is like Lish is living with you I don't create I don't do anything that I don't believe in and this truly is a love letter to my father was my stepfather but he was the father that God meant for me to have and he would be so proud you never know the journey that you're going to enter into when you just say hello to someone saying hello and her looking back at me saying hello resulted in a lifelong friendship so be curious about cooking be curious about other people be curious about our book it is called a confident cook and it is out now it is available wherever book are so cam scan the screen
