Stir well. 3 1/2 cups flour (420 gr). I am using a 200 ml cup. Stir, cover and leave for 30 minutes in a warm place. Cut 2 green zucchini in half. Grate with slices. Put in a bowl. Add 1 tsp salt, stir, cover and leave for 20 minutes. Finely chop red pepper. Finely chop 1 white onion. Chop a bunch of parsley. Cut 2-3 green onions. Peel and grate 1 potato. Add grated potatoes to the dough. Add black pepper. Squeeze out the juice and add to the dough. Add chopped vegetables. Stir well. Add some oil to a hot frying pan. Add pancake mixture. My frying pan is 9 inches (23 cm) I add 2 full ladles. Cook for about 4-5 minutes then flip to the other side and cook the same amount. Why didn't I know this recipe before? Better than pizza! Add spices or sauce to your taste, since the pancake is neutral in taste (not salty or sweet). Pancakes are soft and fluffy!
